Ingredients

  • ¾ lb chicken tenderloins
  • ¼ tsp kosher salt, divided
  • ¼ tsp pepper, divided
  • ½ Tbsp olive oil
  • 1 cup finely chopped celery
  • ½ cup shredded sharp Cheddar cheese
  • ¼ cup sour cream
  • ¼ cup olive-oil mayonnaise
  • ½ cup cream of chicken soup
  • ⅓ cup French fried onions

Instructions

  1. Preheat oven to 375°F. Season chicken with ⅛ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium heat 4 minutes per side or until done. Cool; cut into bite-size pieces.
  2. Stir together chicken, celery, cheese, sour cream, mayonnaise, soup, and ⅛ tsp each salt and pepper in a large bowl. Spoon mixture into a lightly greased 8-inch baking dish.
  3. Bake 30 minutes; sprinkle with onions.
  4. Bake 5 minutes longer or until bubbly around edges. Let stand 10 minutes before serving.

  • 1½ Tbsp olive oil
  • ½ Tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • 2 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Steam broccoli according to package directions. Drain and place in a bowl.
  2. Toss broccoli with oil, lemon juice, garlic, and salt. Sprinkle with cheese.
