Pesto-Grilled Chicken

Butter-Parmesan Egg Noodles and Honey-Glazed Carrots

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ cup basil pesto

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Cut chicken breasts in half crosswise, and pound to even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  3. Spread pesto over chicken. Grill, covered, 4 to 6 minutes per side or until chicken is done.

Side Dish Ingredients

  • 1 (12-oz) pkg extra-wide egg noodles
  • ¼ cup butter, softened
  • ¼ cup grated Parmesan cheese
  • 2 (10-oz) pkg frozen honey-glazed carrots

Side Dish Instructions

  1. Cook noodles according to package directions; toss with butter and cheese.
  2. Steam carrots according to package directions.
