Pesto-Grilled Chicken
Butter-Parmesan Egg Noodles and Honey-Glazed CarrotsIngredients
- 2 lb boneless, skinless chicken breasts
- ½ cup basil pesto
Instructions
- Preheat grill or grill pan to medium-high heat.
- Cut chicken breasts in half crosswise, and pound to even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Spread pesto over chicken. Grill, covered, 4 to 6 minutes per side or until chicken is done.

- 1 (12-oz) pkg extra-wide egg noodles
- ¼ cup butter, softened
- ¼ cup grated Parmesan cheese
- 2 (10-oz) pkg frozen honey-glazed carrots
Side Dish Instructions
- Cook noodles according to package directions; toss with butter and cheese.
- Steam carrots according to package directions.
