Spinach-Tomato Couscous

Ingredients

  • 2 lb ground beef
  • 2 tsp lemon zest
  • 1 tsp ground cumin
  • 1 tsp garlic salt
  • ½ tsp dried oregano
  • ½ tsp ground coriander
  • ½ tsp pepper
  • 1 (6-oz) pkg crumbled feta cheese

Instructions

  1. Stir together beef, lemon zest, cumin, garlic salt, oregano, coriander, and pepper; shape mixture into 18 small patties.
  2. Cook patties, in batches, in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Sprinkle patties with cheese.

  • 1 (10-oz) pkg couscous
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg spinach
  • 2 Tbsp lemon juice
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Prepare couscous according to package directions.
  2. Cook garlic in hot oil in a large skillet over medium heat 1 minute. Gradually add spinach, stirring until just wilted.
  3. Add couscous, lemon juice, and tomatoes. Season with salt and pepper to taste.
