Spiced Mini Burgers
Spinach-Tomato Couscous
Ingredients
- 2 lb ground beef
- 2 tsp lemon zest
- 1 tsp ground cumin
- 1 tsp garlic salt
- ½ tsp dried oregano
- ½ tsp ground coriander
- ½ tsp pepper
- 1 (6-oz) pkg crumbled feta cheese
Instructions
- Stir together beef, lemon zest, cumin, garlic salt, oregano, coriander, and pepper; shape mixture into 18 small patties.
- Cook patties, in batches, in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Sprinkle patties with cheese.

- 1 (10-oz) pkg couscous
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (10-oz) pkg spinach
- 2 Tbsp lemon juice
- 1 pint grape tomatoes, halved
Side Dish Instructions
- Prepare couscous according to package directions.
- Cook garlic in hot oil in a large skillet over medium heat 1 minute. Gradually add spinach, stirring until just wilted.
- Add couscous, lemon juice, and tomatoes. Season with salt and pepper to taste.
