Barbecue Pork Salad

Ingredients

  • ½ cup barbecue sauce
  • ½ cup Ranch dressing
  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp barbecue seasoning
  • 2 Tbsp olive oil
  • 2 romaine lettuce hearts
  • 2 Roma tomatoes, sliced
  • 1 cucumber, cut into half-moons
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (5-oz) pkg Texas toast croutons

Instructions

  1. Stir together barbecue sauce and Ranch dressing; set aside.
  2. Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until done.
  3. Chop lettuce, and divide among 6 plates. Top with pork, tomatoes, cucumber, cheese, and croutons. Serve with dressing.
