Barbecue Pork Salad
Ingredients
- ½ cup barbecue sauce
- ½ cup Ranch dressing
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp barbecue seasoning
- 2 Tbsp olive oil
- 2 romaine lettuce hearts
- 2 Roma tomatoes, sliced
- 1 cucumber, cut into half-moons
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 (5-oz) pkg Texas toast croutons
Instructions
- Stir together barbecue sauce and Ranch dressing; set aside.
- Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until done.
- Chop lettuce, and divide among 6 plates. Top with pork, tomatoes, cucumber, cheese, and croutons. Serve with dressing.
