Salmon, Mango and Avocado Salad

Ingredients

  • 6 (6-oz) skinless salmon fillets (or use frozen)
  • ½ tsp salt
  • 1 lime, halved
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 (10-oz) pkg spring mix
  • 2 avocados, diced
  • 2 mangoes, sliced
  • 1 red onion, thinly sliced

Instructions

  1. Preheat oven to 400°F. Place fish on a greased baking sheet. Bake 12 minutes or until fish flakes with a fork. Flake fish into a bowl; set aside.
  2. Meanwhile, whisk together oil and vinegar in a large bowl. Add salad greens, avocados, mangoes, and onion; toss. Top with fish.
