Roasted Vegetable-Bacon Pizza
Ingredients
- ½ (18-oz) pkg frozen vegetables for roasting (Brussels sprouts, butternut squash and onion)
- ½ (2-count) pkg 12-inch prebaked thin pizza crusts
- 1 Tbsp olive oil
- ¾ cup ricotta cheese
- ½ (2.7-oz) pkg fully cooked bacon, coarsely chopped or torn
- 1¼ cups shredded mozzarella cheese
- 1 Tbsp balsamic glaze
Instructions
- Preheat oven to 450°F. Roast vegetables according to package directions. Cool slightly, and coarsely chop.
- Meanwhile, brush crust with oil; bake according to package directions.
- Spread partially-baked crust with ricotta cheese; sprinkle generously with salt and pepper. Top with roasted vegetables, bacon, and mozzarella.
- Bake 10 minutes until cheese is melted; drizzle with balsamic glaze.
