Lamb Kofta Bowls with Tzatziki Sauce

Ingredients
- ½ lb ground lamb (or use ground beef)
- 1 tsp garam masala
- 1 clove garlic, minced
- ½ tsp salt, divided
- ¼ tsp pepper, divided
- 1 cup whole-grain couscous
- 2 Tbsp chopped fresh mint, divided
- ¼ cup plain Greek yogurt
- ½ organic English cucumber, halved, seeded, and finely chopped
- ½ tsp lemon zest
- 1 tsp fresh lemon juice
- 1 cup organic grape tomatoes, halved
Instructions
- Preheat broiler. Combine lamb, garam masala, garlic, ¼ tsp salt, and ⅛ tsp pepper in a bowl; shape into 6 oblong meatballs.
- Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are done.
- Meanwhile, cook couscous according to package directions; stir in 1 Tbsp mint.
- Stir together yogurt, cucumber, 1 Tbsp mint, lemon zest, lemon juice, ¼ tsp salt, and ⅛ tsp pepper in a small bowl.
- Divide couscous between 2 bowls; top with meatballs, tomatoes, and yogurt sauce.
