Turkey Burgers with Tomato-Feta Relish
Parmesan Zucchini Fries
Ingredients
- 1 plum tomato. diced
- ½ English cucumber, diced
- ½ cup crumbled feta cheese
- ¾ lb ground turkey
- 2½ Tbsp panko breadcrumbs
- 1½ tsp milk
- 1½ tsp Italian seasoning
- ¾ tsp garlic powder
- 1 large egg
Instructions
- Combine tomato, cucumber, and cheese in a bowl.
- Mix together turkey, breadcrumbs, milk, seasoning, garlic powder, and egg in a bowl. Shape into 3 patties.
- Cook patties in a large nonstick skillet coated with cooking spray 5 minutes per side or until done. Top with relish.
Side Dish Ingredients
- 3 zucchini
- ¾ cup freshly grated Parmesan cheese
- 1½ tsp onion powder
- ½ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. Cut zucchini lengthwise into quarters.
- Place zucchini on a parchment-lined baking sheet coated with cooking spray. Sprinkle with cheese, onion powder, pepper, and salt.
- Bake 25 to 30 minutes until golden brown.
