Turkey Burgers with Tomato-Feta Relish

Ingredients

  • 1 plum tomato. diced
  • ½ English cucumber, diced
  • ½ cup crumbled feta cheese
  • ¾ lb ground turkey
  • 2½ Tbsp panko breadcrumbs
  • 1½ tsp milk
  • 1½ tsp Italian seasoning
  • ¾ tsp garlic powder
  • 1 large egg

Instructions

  1. Combine tomato, cucumber, and cheese in a bowl.
  2. Mix together turkey, breadcrumbs, milk, seasoning, garlic powder, and egg in a bowl. Shape into 3 patties.
  3. Cook patties in a large nonstick skillet coated with cooking spray 5 minutes per side or until done. Top with relish.

  • 3 zucchini
  • ¾ cup freshly grated Parmesan cheese
  • 1½ tsp onion powder
  • ½ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 425°F. Cut zucchini lengthwise into quarters.
  2. Place zucchini on a parchment-lined baking sheet coated with cooking spray. Sprinkle with cheese, onion powder, pepper, and salt.
  3. Bake 25 to 30 minutes until golden brown.
