Sweet Potato-and-Ground Turkey Breakfast Hash

Ingredients
- 3 cups frozen peeled and diced sweet potatoes
- 2 Tbsp olive oil, divided
- ½ lb 93% lean ground turkey
- ½ red bell pepper, diced
- 2 tsp chopped fresh rosemary
- ½ tsp smoked paprika
- ¼ tsp salt, divided
- 2 (5-oz) pkg baby spinach
- 4 large eggs
- ¼ tsp pepper
Instructions
- Cook potatoes, covered, in 1 Tbsp hot oil in a large skillet, without stirring, 5 minutes. Stir and cook, covered, 5 to 7 minutes or until browned. Remove potatoes from skillet.
- Cook turkey and bell pepper in same skillet 5 to 6 minutes or until browned and crumbly. Stir in potatoes, rosemary, paprika, and ⅛ tsp salt. Gradually add spinach; cook 3 to 4 minutes or until wilted.
- Meanwhile, heat 1 Tbsp oil in another large nonstick skillet over medium heat. Crack eggs into skillet; sprinkle with pepper and ⅛ tsp salt. Cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Divide hash among 4 plates; top with eggs.
