Open-Faced Tuna Melts

Ingredients

  • 3 (5-oz) cans solid albacore tuna in water, drained and flaked
  • 3 Tbsp reduced-fat olive-oil mayonnaise
  • 2 Tbsp minced red onion
  • 1 Tbsp sweet pickle relish
  • 2 tsp lemon juice
  • ⅛ tsp pepper
  • 4 (1-oz) slices whole-grain bread
  • 2 tsp light butter with canola oil 
  • 4 slices reduced-fat 2% colby-Jack cheese

Instructions

  1. Preheat broiler. Stir together tuna, mayonnaise, onion, relish, lemon juice, and pepper in a bowl.
  2. Arrange bread on a large baking sheet; spread one side with butter. Broil 1 minute or until lightly toasted.
  3. Spoon tuna mixture onto bread; top with cheese. Broil 2 minutes or just until cheese is melted.

Side Dish Ingredients

  • 4 small oranges, peeled and sectioned
  • 2 cups sliced cucumber 

Side Dish Instructions

  1. Serve oranges and cucumber slices alongside tuna melts.
