Open-Faced Tuna Melts
Fresh Oranges and Cucumber Slices
Ingredients
- 3 (5-oz) cans solid albacore tuna in water, drained and flaked
- 3 Tbsp reduced-fat olive-oil mayonnaise
- 2 Tbsp minced red onion
- 1 Tbsp sweet pickle relish
- 2 tsp lemon juice
- ⅛ tsp pepper
- 4 (1-oz) slices whole-grain bread
- 2 tsp light butter with canola oil
- 4 slices reduced-fat 2% colby-Jack cheese
Instructions
- Preheat broiler. Stir together tuna, mayonnaise, onion, relish, lemon juice, and pepper in a bowl.
- Arrange bread on a large baking sheet; spread one side with butter. Broil 1 minute or until lightly toasted.
- Spoon tuna mixture onto bread; top with cheese. Broil 2 minutes or just until cheese is melted.

- 4 small oranges, peeled and sectioned
- 2 cups sliced cucumber
