Ingredients

  • ¾ cup plain hummus
  • 4 soft taco-size flour tortillas (preferably whole wheat)
  • ½ lb asparagus, trimmed and halved lengthwise
  • 1 small red bell pepper, thinly sliced
  • 1 cup baby arugula
  • ⅔ cup matchstick carrots
  • ⅓ cup thinly sliced red onion
  • ¾ cup crumbled goat cheese (or use feta)

Instructions

  1. Spread hummus on tortillas. Top with asparagus, bell pepper, arugula, carrots, onion, and cheese. Roll up; cut in half.
