Hummus Veggie Wraps
Ingredients
- ¾ cup plain hummus
- 4 soft taco-size flour tortillas (preferably whole wheat)
- ½ lb asparagus, trimmed and halved lengthwise
- 1 small red bell pepper, thinly sliced
- 1 cup baby arugula
- ⅔ cup matchstick carrots
- ⅓ cup thinly sliced red onion
- ¾ cup crumbled goat cheese (or use feta)
Instructions
- Spread hummus on tortillas. Top with asparagus, bell pepper, arugula, carrots, onion, and cheese. Roll up; cut in half.
