Crispy Shrimp Panzanella

Ingredients
- 1 (16-oz) loaf Italian bread, torn into pieces
- 6 Tbsp olive oil, divided
- 1 (14-oz) pkg frozen popcorn shrimp
- 3 Tbsp red wine vinegar
- 2 lb tomatoes, chopped
- 1 (1-oz) pkg fresh basil, thinly sliced
- ½ English cucumber, sliced
- 1 yellow bell pepper, chopped
- 1 (5-oz) carton shaved Parmesan cheese
Instructions
- Preheat oven to 400°F. Toss bread pieces with 2 Tbsp oil, and arrange in a single layer on a baking sheet. Bake 10 to 15 minutes or until toasted; set aside.
- Bake shrimp according to package directions.
- Whisk together 4 Tbsp oil and vinegar in a large bowl. Add tomatoes, basil, cucumber, bell pepper, cheese, toasted bread, and shrimp; toss.
