Sweet and Tangy Chicken Salad Pitas
Potato Chips and Melon Chunks
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1½ cups seedless grapes, halved
- ¾ cup diced celery
- ¾ cup mayonnaise
- ⅓ cup honey
- 6 pita bread rounds, halved
- 1 head green leaf lettuce, separated into leaves
Instructions
- Bring chicken and water to cover to a boil in a large saucepan. Reduce heat, and simmer 20 minutes or until chicken is done; drain, cool, and coarsely chop chicken.
- Stir together chicken, grapes, celery, mayonnaise, and honey. Season with salt and pepper to taste.
- Line pita halves with lettuce leaves; fill with chicken salad.

- 1 (8-oz) pkg potato chips
- 1 cantaloupe, cut into chunks
Side Dish Instructions
- Serve chips and cantaloupe alongside sandwiches.
