Sweet and Tangy Chicken Salad Pitas

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1½ cups seedless grapes, halved
  • ¾ cup diced celery
  • ¾ cup mayonnaise
  • ⅓ cup honey
  • 6 pita bread rounds, halved
  • 1 head green leaf lettuce, separated into leaves

Instructions

  1. Bring chicken and water to cover to a boil in a large saucepan. Reduce heat, and simmer 20 minutes or until chicken is done; drain, cool, and coarsely chop chicken.
  2. Stir together chicken, grapes, celery, mayonnaise, and honey. Season with salt and pepper to taste.
  3. Line pita halves with lettuce leaves; fill with chicken salad.

Side Dish Ingredients

  • 1 (8-oz) pkg potato chips
  • 1 cantaloupe, cut into chunks

Side Dish Instructions

  1. Serve chips and cantaloupe alongside sandwiches.
