Fried Egg and Avocado Sandwiches

Ingredients

  • 1 (12-oz) pkg bacon
  • ¼ cup butter, softened and divided
  • 6 English muffins, split
  • 6 large eggs
  • 1 tomato, thinly sliced
  • 2 avocados, sliced

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels. Wipe skillet clean.
  2. Preheat broiler. Spread 2 Tbsp butter on cut sides of muffins. Place muffins, cut side up, on a baking sheet. Broil 2 to 3 minutes or until toasted.
  3. Melt 1 Tbsp butter in skillet over medium heat. Crack 3 eggs into skillet.
  4. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; season with salt and pepper. Repeat with remaining butter and eggs.
  5. Top each muffin bottom with bacon, tomato, avocado, and a fried egg. Cover with muffin tops; serve hot.

Side Dish Ingredients

  • ½ honeydew, cut into wedges
  • ½ cantaloupe, cut into wedges
  • ½ lb seedless red grapes

Side Dish Instructions

  1. Toss together all ingredients, and serve alongside sandwiches.
