Fried Egg and Avocado Sandwiches

- 1 (12-oz) pkg bacon
- ¼ cup butter, softened and divided
- 6 English muffins, split
- 6 large eggs
- 1 tomato, thinly sliced
- 2 avocados, sliced
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels. Wipe skillet clean.
- Preheat broiler. Spread 2 Tbsp butter on cut sides of muffins. Place muffins, cut side up, on a baking sheet. Broil 2 to 3 minutes or until toasted.
- Melt 1 Tbsp butter in skillet over medium heat. Crack 3 eggs into skillet.
- Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness; season with salt and pepper. Repeat with remaining butter and eggs.
- Top each muffin bottom with bacon, tomato, avocado, and a fried egg. Cover with muffin tops; serve hot.

- ½ honeydew, cut into wedges
- ½ cantaloupe, cut into wedges
- ½ lb seedless red grapes
Side Dish Instructions
- Toss together all ingredients, and serve alongside sandwiches.
