Loaded Potato Barbecue Pork Casserole

Ingredients

  • 10 slices bacon, chopped
  • 3 lb red potatoes, cut into 1-inch pieces
  • 1 (8-oz) block cream cheese
  • ¼ cup butter
  • 1 (16-oz) container barbecue pork
  • ½ (18-oz) bottle barbecue sauce
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 4 green onions, sliced

Instructions

  1. Preheat oven to 350°F. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Meanwhile, cook potatoes in boiling water to cover 10 minutes or until tender; drain and return to saucepan. Add cream cheese and butter to potatoes. Using a potato masher, mash potatoes to desired consistency.
  3. Spread potatoes in a lightly greased 13- x 9-inch baking dish. Top with barbecue pork, desired amount of sauce, bacon, and cheese. Bake 25 minutes or until hot. Sprinkle with onions.

  • 4 carrots, cut into ¼-inch-thick sticks
  • 1 lb green beans, trimmed
  • 2 Tbsp olive oil

  1. Preheat oven to 350°F. Toss carrots, green beans, and oil on a large rimmed baking sheet. Season with salt and pepper to taste; toss.
  2. Bake 25 minutes or until tender.
