Cashew Beef and Cabbage Bowls

Ingredients

  • ¼ cup sesame oil, divided
  • 2 Tbsp lime juice
  • 5 Tbsp soy sauce
  • 1 (10-oz) pkg angel hair coleslaw
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 3 green onions, chopped
  • 1½ lb ground beef
  • 1 cup cashews

Instructions

  1. Whisk together 3 Tbsp oil, lime juice, and soy sauce in a medium bowl. Add slaw; toss.
  2. Sauté garlic and ginger in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 1 to 2 minutes.
  3. Add onions; cook 2 minutes. Add beef; cook 8 to 10 minutes or until browned and crumbly. Drain. Season with salt and pepper to taste.
  4. Divide coleslaw among bowls; top with beef mixture. Sprinkle with nuts.
