Lemony Tuna Patties with Avocado
Orange-Scented Carrots
Ingredients
- 4 (5-oz) cans wild-caught albacore tuna
- 3 large eggs, lightly beaten
- 1 red bell pepper, finely chopped
- ¼ cup almond flour
- ¼ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
- 1 Tbsp lemon zest
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp coconut oil (or use avocado oil)
- 6 romaine lettuce leaves, halved crosswise
- 2 avocados, mashed
Instructions
- Combine tuna, eggs, bell pepper, lemon zest, flour, mayonnaise, salt, and pepper in a bowl; shape into 12 small patties.
- Melt oil in a large nonstick skillet over medium heat; add patties, and cook 4 to 5 minutes per side or until browned and firm.
- Arrange lettuce in 6 stacks of 2 leaves each. Serve tuna patties on lettuce with avocado.

- 1 orange
- 2 lb carrots, sliced
- ½ cup organic chicken broth
- 1 clove garlic, minced
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Grate zest and squeeze juice from orange. Combine carrots, orange zest and juice, broth, garlic, salt, and pepper in a large saucepan over medium-high heat; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until tender.
- Serve carrots with a slotted spoon.
