Orange-Ginger Quinoa Pilaf with Tofu

Ingredients
- 1½ cups quinoa
- 2 (8-oz) pkg marinated sesame ginger baked tofu (see Note)
- 3 Tbsp soy sauce (or use tamari)
- 1½ Tbsp fresh orange juice
- 2 tsp ginger paste
- 1 cup thinly sliced onion
- 1½ Tbsp olive oil
- 2 cups broccoli florets, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
Instructions
- Cook quinoa according to package directions.
- Meanwhile, place tofu on several layers of paper towels to drain. Cut into cubes .
- Combine soy sauce, orange juice, and ginger in small bowl.
- Cook onion and carrots in hot oil in a large skillet over medium-high heat 4 minutes. Add broccoli and garlic; cook 5 minutes.
- Reduce heat to medium; add tofu, quinoa, and soy sauce mixture, and cook until thoroughly heated, stirring gently.
