Orange-Ginger Quinoa Pilaf with Tofu

Ingredients

  • 1½ cups quinoa
  • 2 (8-oz) pkg marinated sesame ginger baked tofu (see Note)
  • 3 Tbsp soy sauce (or use tamari)
  • 1½ Tbsp fresh orange juice
  • 2 tsp ginger paste
  • 1 cup thinly sliced onion
  • 1½ Tbsp olive oil
  • 2 cups broccoli florets, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, place tofu on several layers of paper towels to drain. Cut into cubes .
  3. Combine soy sauce, orange juice, and ginger in small bowl.
  4. Cook onion and carrots in hot oil in a large skillet over medium-high heat 4 minutes. Add broccoli and garlic; cook 5 minutes.
  5. Reduce heat to medium; add tofu, quinoa, and soy sauce mixture, and cook until thoroughly heated, stirring gently.
