Greek Chickpea-Bulgur Salad
Lemony Mixed Greens
Ingredients
- 1½ cups bulgur wheat (or use couscous)
- 2 (15-oz) cans chickpeas, drained and rinsed
- 2 tomatoes, chopped
- 1 English cucumber, chopped
- ½ red onion, thinly sliced
- ½ cup chopped fresh flat-leaf parsley
- ¼ cup chopped fresh mint
- ¼ cup vegan olive oil vinaigrette
Instructions
- Cook bulgur according to package directions; drain, and rinse under cold water to cool.
- Toss together bulgur, chickpeas, and remaining ingredients in a large bowl. Season with salt and pepper to taste.

- 2 (5-oz) pkg spring mix
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a large bowl.
