Greek Chickpea-Bulgur Salad

Ingredients

  • 1½ cups bulgur wheat (or use couscous)
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 2 tomatoes, chopped
  • 1 English cucumber, chopped
  • ½ red onion, thinly sliced
  • ½ cup chopped fresh flat-leaf parsley
  • ¼ cup chopped fresh mint
  • ¼ cup vegan olive oil vinaigrette

Instructions

  1. Cook bulgur according to package directions; drain, and rinse under cold water to cool.
  2. Toss together bulgur, chickpeas, and remaining ingredients in a large bowl. Season with salt and pepper to taste.

  • 2 (5-oz) pkg spring mix
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Toss together all ingredients in a large bowl.
