Mediterranean Scrambled Eggs
Orange WedgesIngredients
- 1½ cups halved grape tomatoes
- 1 clove garlic, minced
- 2 Tbsp olive oil, divided
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp dried oregano
Instructions
- Cook tomatoes and garlic in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until tomatoes are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted.
- Whisk together eggs, salt, pepper, and oregano.
- Add 1 Tbsp oil and eggs to skillet; reduce heat to medium. Cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.

- 2 navel oranges, cut into wedges

- Serve orange wedges alongside eggs.
