Mediterranean Scrambled Eggs

Ingredients

  • 1½ cups halved grape tomatoes
  • 1 clove garlic, minced
  • 2 Tbsp olive oil, divided
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp dried oregano

Instructions

  1. Cook tomatoes and garlic in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until tomatoes are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted.
  2. Whisk together eggs, salt, pepper, and oregano.
  3. Add 1 Tbsp oil and eggs to skillet; reduce heat to medium. Cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set.

Side Dish Ingredients

  • 2 navel oranges, cut into wedges

Side Dish Instructions

  1. Serve orange wedges alongside eggs.
