Sausage with Tomato, Eggs, and Avocado Crema

Ingredients

  • 1 lb turkey breakfast sausage patties
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • 1 Tbsp olive oil
  • 4 large eggs
  • ½ tsp pepper, divided
  • 1 avocado
  • 2 Tbsp lime juice
  • 1 Tbsp Greek yogurt
  • 1 large tomato, cut into 4 slices
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Sprinkle sausage with garlic powder and cumin. Cook sausage in hot oil in a large nonstick skillet over medium-high heat 6 minutes or until done. Remove sausage from pan, reserving drippings in skillet.
  2. Crack eggs into skillet; reduce heat to medium, cover and cook 3 minutes or until whites are set and yolks are to desired doneness; sprinkle with ¼ tsp pepper.
  3. Process avocado, lime juice, yogurt, and ¼ tsp pepper in a blender or food processor, scraping sides as needed or mash together in a bowl. Stir in enough water to reach desired consistency.
  4. Divide sausage among 4 plates; top with tomato slices, eggs, avocado crema, and cilantro.
