Ingredients

  • 2 lb lean ground beef
  • 1 (8-oz) pkg diced yellow onion
  • 1 (16-oz) pkg frozen peas and carrots
  • 1 (14.5-oz) can low-sodium beef broth
  • 2 Tbsp cornstarch
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp tomato paste
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (24-oz) carton refrigerated mashed potatoes

Instructions

  1. Cook beef and onion in a large skillet over medium heat 8 minutes or until meat is browned and onion is tender. Add peas and carrots.
  2. Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and salt and pepper; add to skillet.
  3. Cook 3 to 5 minutes or until sauce is thickened; transfer mixture to a 3-quart baking dish.
  4. Meanwhile, preheat broiler; heat mashed potatoes according to package directions.
  5. Top beef mixture with mashed potatoes. Broil 8 to 10 minutes on second oven shelf until browned and bubbly.
