Cottage Pie
Ingredients
- 2 lb lean ground beef
- 1 (8-oz) pkg diced yellow onion
- 1 (16-oz) pkg frozen peas and carrots
- 1 (14.5-oz) can low-sodium beef broth
- 2 Tbsp cornstarch
- 1 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- ½ tsp salt
- ½ tsp pepper
- 1 (24-oz) carton refrigerated mashed potatoes
Instructions
- Cook beef and onion in a large skillet over medium heat 8 minutes or until meat is browned and onion is tender. Add peas and carrots.
- Whisk together broth, cornstarch, Worcestershire sauce, tomato paste, and salt and pepper; add to skillet.
- Cook 3 to 5 minutes or until sauce is thickened; transfer mixture to a 3-quart baking dish.
- Meanwhile, preheat broiler; heat mashed potatoes according to package directions.
- Top beef mixture with mashed potatoes. Broil 8 to 10 minutes on second oven shelf until browned and bubbly.
