One-Pot Taco Chili Mac

Ingredients

  • 1½ lb lean ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1 (14.5-oz) can no-salt-added diced tomatoes with green chiles
  • 1 (8-oz) can BPA-free organic tomato sauce
  • 1 (14.5-oz) can low-sodium beef broth
  • 1 cup water
  • ½ tsp salt
  • ½ (16-oz) pkg whole-grain elbow macaroni
  • 1¾ cups shredded sharp Cheddar cheese
  • ½ cup chopped fresh cilantro
  • 2 green onions, chopped

Instructions

  1. Cook beef, onion, and garlic in a large, deep skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in chili powder, tomatoes, tomato sauce, broth, water, and salt. Bring to a boil; add macaroni.
  3. Cook 10 minutes or until macaroni is tender, stirring occasionally. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted. Sprinkle with cilantro and onions.
