Spaghetti Carbonara

Ingredients

  • 1 (16-oz) pkg spaghetti, broken
  • 8 slices bacon, chopped
  • 3 Tbsp minced garlic
  • 4 large eggs (see Note)
  • 1½ cups freshly grated Parmesan cheese
  • 1 tsp pepper

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Meanwhile, cook bacon in a large deep skillet over medium heat 10 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet.
  3. Add garlic to skillet; cook 1 minute. Add pasta to skillet; toss. Cook 2 minutes or until very hot.
  4. Whisk together eggs and cheese in a bowl. Add egg mixture and bacon to hot pasta in skillet; toss using tongs. Add ½ cup hot pasta water and pepper; toss.
