Smothered Green Chile Chicken

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 2 (4-oz) cans diced green chiles
  • 6 oz cream cheese
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1½ cups shredded Mexican-blend cheese
  • 3 green onions, thinly sliced

Instructions

  1. Preheat oven to 400°F. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side. Transfer chicken to a 13- x 9-inch baking dish.
  2. Combine chiles, cream cheese, cumin, and garlic powder. Spread over chicken; sprinkle with cheese.
  3. Bake 15 minutes or until chicken is done. Sprinkle with onions.

  • 1 Tbsp honey

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 (15-oz) can black beans, drained and rinsed
  • 3 Roma tomatoes, sliced
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Whisk together oil, lime juice, honey, and salt in a bowl. Add lettuce, beans, tomatoes, and cilantro; toss.
