Tex-Mex Gnocchi

Shredded Lettuce Salad

Ingredients

  • ½ Tbsp butter
  • ½ (16-oz) pkg gnocchi
  • ½ lb plant-based ground beef 
  • ½ (10-oz) can no-salt-added diced tomatoes and green chiles
  • ½ cup low-sodium chicken broth
  • ½ (1-oz) envelope 25%-less-sodium taco seasoning mix
  • ½ cup shredded reduced-fat Cheddar cheese
  • 2 Tbsp reduced-fat sour cream 

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Cook beef in same skillet over medium heat until browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, broth, taco seasoning, and gnocchi. Bring to a boil, reduce heat, cover, and simmer 10 minutes or until gnocchi is tender. Sprinkle with cheese; cover, and cook 2 minutes or until cheese melts.
  4. Top with Shredded Lettuce Salad recipe and sour cream.

Side Dish Ingredients

  • ½ (8-oz) pkg shredded lettuce
  • ½ small tomato, chopped
  • ½ (3.5-oz) pkg tricolored tortilla strips
  • 1½ Tbsp cilantro-lime vinaigrette

Side Dish Instructions

  1. Toss together all ingredients just before serving. Serve over Tex-Mex Gnocchi recipe, if desired.
