Smoked Salmon Frittata
Sautéed Lemon AsparagusIngredients
- 6 large eggs, lightly beaten
- ½ (4-oz) pkg smoked salmon, chopped
- 2 tsp minced fresh dill (or use ½ tsp dried dill)
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. Whisk together all ingredients in a large bowl. Pour into a lightly greased pie plate. Bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- 1 lb asparagus, trimmed
- 1 Tbsp avocado oil
- ½ Tbsp fresh lemon juice
- 1 tsp lemon zest
Side Dish Instructions
- Sauté all ingredients in a large skillet over medium-high heat 5 minutes or until asparagus is crisp-tender. Sprinkle with salt and pepper to taste.
