Ingredients
- 2 boneless, skinless chicken breasts
- ¼ cup sour cream
- ½ (1-oz) envelope Ranch dressing mix, divided
- ½ cup panko breadcrumbs
- ½ cup shredded sharp Cheddar cheese
Instructions
- Preheat oven to 450°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Mix together sour cream and ½ Tbsp Ranch dressing mix in a bowl. Combine panko, cheese, and ½ Tbsp Ranch dressing mix in another shallow bowl.
- Spread sour cream mixture over one side of each chicken breast; dredge coated side in panko mixture, pressing to adhere. Place chicken, coated side up, in a greased small baking dish.
- Bake 15 to 18 minutes or until chicken is done.

- 1 (12-oz) pkg vegetable medley (broccoli, cauliflower, and carrots)
- 1 Tbsp butter, melted
- ½ tsp garlic salt
- ⅛ tsp pepper
