Smoky Chicken Chili

Ingredients
- 1½ lb bone-in, skin-on chicken thighs
- 1 Tbsp olive oil
- ½ onion, chopped
- ½ green bell pepper, chopped
- 1 (14.5-oz) can diced tomatoes
- 1 (14.5-oz) can low-sodium chicken broth
- 1 cup heavy cream
- 3 Tbsp chopped chipotle peppers in adobo sauce (about 3 to 4 peppers)
- ½ tsp salt
- ½ tsp pepper
- 2 green onions, sliced
Instructions
- Pat chicken dry with paper towels. Sear chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side.
- Combine chicken, onion, bell pepper, tomatoes, broth, cream, chipotle peppers, salt, and pepper in a 5- or 6-quart slow cooker.
- Cover and cook on LOW 8 hours. Remove and chop chicken, discarding skin and bones; return chicken to cooker. Sprinkle each serving with green onions.
