Smoky Chicken Chili

Ingredients

  • 1½ lb bone-in, skin-on chicken thighs
  • 1 Tbsp olive oil
  • ½ onion, chopped
  • ½ green bell pepper, chopped
  • 1 (14.5-oz) can diced tomatoes
  • 1 (14.5-oz) can low-sodium chicken broth
  • 1 cup heavy cream
  • 3 Tbsp chopped chipotle peppers in adobo sauce (about 3 to 4 peppers)
  • ½ tsp salt
  • ½ tsp pepper
  • 2 green onions, sliced

Instructions

  1. Pat chicken dry with paper towels. Sear chicken in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side.
  2. Combine chicken, onion, bell pepper, tomatoes, broth, cream, chipotle peppers, salt, and pepper in a 5- or 6-quart slow cooker.
  3. Cover and cook on LOW 8 hours. Remove and chop chicken, discarding skin and bones; return chicken to cooker. Sprinkle each serving with green onions.
