Pork Tenderloin "Tacos"

Ingredients

  • 3 Tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 (1-lb) pork tenderloin, trimmed
  • ½ tsp salt
  • ½ tsp pepper
  • 8 large romaine leaves, halved crosswise

Instructions

  1. Preheat oven to 400°F. Combine 2 Tbsp oil, garlic, and chili powder; rub mixture all over pork. Sprinkle with salt and pepper.
  2. Brown pork on all sides in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 5 minutes.
  3. Transfer skillet to oven. Bake 15 minutes or until a meat thermometer reads 145°F. Let stand 10 minutes; thinly slice pork.
  4. For each "taco," stack 2 lettuce leaves. Fill lettuce with sliced pork and Lime-Cilantro Slaw recipe. Fold up to serve like a taco.

  • ⅓ cup olive oil
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1 (10-oz) pkg shredded coleslaw
  • ⅓ cup chopped fresh cilantro

Side Dish Instructions

  1. Whisk together oil, lime zest, and lime juice in a large bowl. Add slaw and cilantro; toss.
