Cheesy Beef Quesadillas

Ingredients

  • ½ lb ground sirloin
  • ¼ cup chopped onion
  • ¼ tsp garlic powder
  • ¾ cup baby spinach
  • 2 burrito-size flour tortillas
  • 1 tsp olive oil
  • ½ cup shredded Mexican-blend cheese
  • 1 green onion, sliced

Instructions

  1. Preheat oven to 400°F. Sprinkle beef and onion with garlic powder. Cook in a large skillet over medium-high heat 6 to 8 minutes or until beef is browned and crumbly and onion is tender. Add spinach; cook 2 minutes or until wilted.
  2. Brush one side of tortillas with oil, and place, oiled sides down, on a rimmed baking sheet.
  3. Divide beef mixture between tortillas, placing ingredients on one half of each tortilla. Top with cheese and onion. Fold tortillas in half.
  4. Bake 6 minutes, and flip. Bake 6 to 7 minutes longer or until tortillas are browned and cheese is melted. Cut into wedges.

  • 1 cup pineapple chunks
  • 1 Tbsp brown sugar

Side Dish Instructions

  1. Sprinkle pineapple with brown sugar. Cook in a small skillet over medium-high heat 4 to 5 minutes per side or until charred.
