Berry-Ricotta Parfaits
Ingredients
- 1 orange
- 1 (15-oz) carton ricotta cheese
- 1 Tbsp honey
- 1 (6-oz) pkg raspberries
- 1 (4.4-oz) pkg blueberries
- ⅓ cup low-fat granola
- Fresh mint leaves (optional)
Instructions
- Grate zest and squeeze juice from orange to equal 1 Tbsp zest and 2 Tbsp juice. Stir together ricotta, honey, zest, and juice.
- Layer ricotta mixture and berries in 4 glasses. Top with granola, and fresh mint, if using.
