Berry-Ricotta Parfaits

Ingredients

  • 1 orange
  • 1 (15-oz) carton ricotta cheese
  • 1 Tbsp honey
  • 1 (6-oz) pkg raspberries
  • 1 (4.4-oz) pkg blueberries
  • ⅓ cup low-fat granola
  • Fresh mint leaves (optional)

Instructions

  1. Grate zest and squeeze juice from orange to equal 1 Tbsp zest and 2 Tbsp juice. Stir together ricotta, honey, zest, and juice.
  2. Layer ricotta mixture and berries in 4 glasses. Top with granola, and fresh mint, if using.
