Easy Egg and Sausage Scramble

Ingredients

  • 4 plant-based breakfast sausage patties
  • 1 tsp olive oil
  • ½ cup chopped red bell pepper
  • 1 clove garlic, minced
  • 6 large eggs, lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 oz ⅓-less-fat cream cheese, cubed
  • ¼ cup shredded reduced-fat Cheddar cheese

Instructions

  1. Cook sausage in hot oil according to package directions; slightly cool, and crumble patties.
  2. Sauté bell pepper and garlic in skillet 4 to 6 minutes. Add eggs to skillet. Cook over medium-low heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in salt and pepper.
  3. Stir in cream cheese and sausage. Cook 1 to 2 minutes. Sprinkle with Cheddar cheese.

  • 2 cups frozen riced cauliflower
  • 1 large egg, lightly beaten
  • 1 slice center cut bacon, cooked and chopped
  • 1 Tbsp all-purpose flour
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • Ketchup (optional)

Side Dish Instructions

  1. Sauté riced cauliflower in a large nonstick skillet coated with cooking spray over medium-high heat 2 to 3 minutes to remove excess moisture.
  2. Toss together cauliflower, egg, bacon, and flour. Sprinkle with salt and pepper. Spoon mixture by ¼ cupfuls onto same hot skillet coated with oil.
  3. Cook 2 to 4 minutes per side or until golden brown. Serve with ketchup, if desired.
