Easy Egg and Sausage Scramble
Cauliflower Fritters
Ingredients
- 4 plant-based breakfast sausage patties
- 1 tsp olive oil
- ½ cup chopped red bell pepper
- 1 clove garlic, minced
- 6 large eggs, lightly beaten
- ¼ tsp salt
- ¼ tsp pepper
- 1 oz ⅓-less-fat cream cheese, cubed
- ¼ cup shredded reduced-fat Cheddar cheese
Instructions
- Cook sausage in hot oil according to package directions; slightly cool, and crumble patties.
- Sauté bell pepper and garlic in skillet 4 to 6 minutes. Add eggs to skillet. Cook over medium-low heat, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Stir in salt and pepper.
- Stir in cream cheese and sausage. Cook 1 to 2 minutes. Sprinkle with Cheddar cheese.
Side Dish Ingredients
- 2 cups frozen riced cauliflower
- 1 large egg, lightly beaten
- 1 slice center cut bacon, cooked and chopped
- 1 Tbsp all-purpose flour
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- Ketchup (optional)
Side Dish Instructions
- Sauté riced cauliflower in a large nonstick skillet coated with cooking spray over medium-high heat 2 to 3 minutes to remove excess moisture.
- Toss together cauliflower, egg, bacon, and flour. Sprinkle with salt and pepper. Spoon mixture by ¼ cupfuls onto same hot skillet coated with oil.
- Cook 2 to 4 minutes per side or until golden brown. Serve with ketchup, if desired.
