Beyond Beef Broccoli Bowl

Ingredients

  • 1 lb plant-based ground beef
  • 3 garlic cloves, minced
  • ¼ cup packed brown sugar
  • ¼ cup reduced-sodium soy sauce
  • 2 tsp toasted sesame oil
  • ¼ tsp ground ginger
  • ¼ tsp crushed red pepper flakes (optional)
  • ¼ tsp pepper
  • 2 cups hot cooked brown rice
  • 1 cup steamed broccoli, or vegetable of choice
  • Sliced green onions and sesame seeds for garnish

Instructions

  1. In a large skillet, cook the plant-based beef according to package instructions, adding in minced garlic.
  2. In a small bowl, whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper.
  3. Pour mixture over plant-based beef and let simmer for another 1-2 minutes.
  4. Steam broccoli (or other vegetables of choice) and cook rice according to package instructions.
  5. Add hot rice, broccoli and plant-based beef into bowl. Garnish with green onions and sesame seeds. Serves 4.
