New Year, New You Power Bowl
Ingredients
- 2 fresh plant-based burger patties
- 2 cups TriBlend Quinoa
- 1 Kabocha Squash (or Acorn Squash)
- 4 Tbsp White bean Hummus (or red beet for color)
- ½ large avocado
- 1 cup kale
- ½ cup Pomegranate seeds
- Salt & Pepper
- Avocado oil to drizzle
Instructions
- Preheat oven to 400°F. In a skillet, add plant-based patties and break it into crumble-like pieces and cook through.
- Cut kabocha squash into slices and place on baking sheet. Drizzle avocado oil.
- Place in oven and let roast for approximately 30 minutes.
- In a pot, cook quinoa thoroughly. Cut avocado slices.
- Assemble bowl and serve. Serves 2.
