Ingredients

  • 2 fresh plant-based burger patties
  • 2 cups TriBlend Quinoa
  • 1 Kabocha Squash (or Acorn Squash)
  • 4 Tbsp White bean Hummus (or red beet for color)
  • ½ large avocado
  • 1 cup kale
  • ½ cup Pomegranate seeds
  • Salt & Pepper
  • Avocado oil to drizzle

Instructions

  1. Preheat oven to 400°F. In a skillet, add plant-based patties and break it into crumble-like pieces and cook through.
  2. Cut kabocha squash into slices and place on baking sheet. Drizzle avocado oil.
  3. Place in oven and let roast for approximately 30 minutes.
  4. In a pot, cook quinoa thoroughly. Cut avocado slices.
  5. Assemble bowl and serve. Serves 2.
