Tex-Mex Gnocchi

Ingredients

  • 1 Tbsp vegan butter
  • 1 (16-oz) pkg gnocchi
  • 1 lb plant-based ground beef 
  • 1 (10-oz) can no-salt-added diced tomatoes and green chiles
  • 1 cup vegetable broth (or use low sodium)
  • 1 (1-oz) envelope 25%-less-sodium taco seasoning mix
  • 1 cup shredded vegan Cheddar cheese
  • ½ (8-oz) pkg shredded lettuce
  • ¼ cup vegan sour cream
  • 1 (3.5-oz) pkg tricolor tortilla strips

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Cook plant-based beef in same skillet over medium heat until browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, broth, taco seasoning, and gnocchi. Bring to a boil, reduce heat, cover, and simmer 10 minutes or until gnocchi is tender. Sprinkle with cheese; cover and cook 2 minutes or until cheese melts.
  4. Top with shredded lettuce, sour cream, and tortilla strips. Serves 6.
