Chicken Pita Pizzas

Ingredients

  • 4 whole wheat pita bread rounds
  • 2 tsp olive oil
  • 1 cup chopped rotisserie chicken
  • ¾ cup frozen corn kernels, thawed
  • ½ cup chopped roasted red peppers
  • ½ Tbsp low-sodium taco seasoning mix
  • 1 Tbsp butter, melted
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 450°F. Arrange pita rounds on a baking sheet. Brush tops with oil.
  2. Toss together chicken, corn, bell peppers, seasoning, and butter in a bowl. Divide among pitas. Sprinkle with cheese.
  3. Bake 5 to 10 minutes or until cheese melts. Cut into small wedges, if desired.

  • 1 (16-oz) pkg strawberries

  1. Serve berries with pizzas.
