Pancetta-Wrapped Pork Tenderloin
Broiled Zucchini and Baguette
Ingredients
- 2 tsp dried oregano
- 2 tsp dried basil
- ½ tsp pepper
- 2 (1-lb) pork tenderloins, trimmed
- 3 oz thinly sliced pancetta (or use prosciutto)
Instructions
- Preheat grill pan to medium-high heat. Combine oregano, basil, and pepper. Rub over pork.
- Wrap pancetta around pork. Cook 18 to 20 minutes until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
Side Dish Ingredients
- 4 zucchini, quartered lengthwise into spears
- 2 Tbsp olive oil
- ½ tsp garlic salt
- ½ tsp pepper
- 1 (8-oz) French baguette, sliced
- 3 Tbsp butter
- ½ tsp dried crushed rosemary
- ½ cup freshly shredded Parmesan cheese
Side Dish Instructions
- Preheat broiler. Toss together zucchini, oil, garlic salt, and pepper on a rimmed baking sheet. Broil 6 to 8 minutes or until lightly browned and tender, turning once.
- Meanwhile, arrange bread on a baking sheet. Broil 2 to 3 minutes or until toasted. Combine butter and rosemary; spread over bread.
- Toss zucchini with cheese. Serve zucchini and bread alongside pork.
