Pancetta-Wrapped Pork Tenderloin

Ingredients

  • 2 tsp dried oregano
  • 2 tsp dried basil
  • ½ tsp pepper
  • 2 (1-lb) pork tenderloins, trimmed
  • 3 oz thinly sliced pancetta (or use prosciutto)

Instructions

  1. Preheat grill pan to medium-high heat. Combine oregano, basil, and pepper. Rub over pork.
  2. Wrap pancetta around pork. Cook 18 to 20 minutes until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.

Side Dish Ingredients

  • 4 zucchini, quartered lengthwise into spears
  • 2 Tbsp olive oil
  • ½ tsp garlic salt
  • ½ tsp pepper
  • 1 (8-oz) French baguette, sliced
  • 3 Tbsp butter
  • ½ tsp dried crushed rosemary
  • ½ cup freshly shredded Parmesan cheese

Side Dish Instructions

  1. Preheat broiler. Toss together zucchini, oil, garlic salt, and pepper on a rimmed baking sheet. Broil 6 to 8 minutes or until lightly browned and tender, turning once.
  2. Meanwhile, arrange bread on a baking sheet. Broil 2 to 3 minutes or until toasted. Combine butter and rosemary; spread over bread.
  3. Toss zucchini with cheese. Serve zucchini and bread alongside pork.
