Easy London Broil

Green Beans with Walnuts and Blue Cheese

Ingredients

  • 1½ lb top London broil, trimmed (or use flank steak)
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp butter, softened

Instructions

  1. Sprinkle both sides of steak with salt and pepper. Rub butter over steak. Let steak stand at room temperature 30 minutes.
  2. Preheat oven to 425°F. Heat a large cast-iron skillet over medium-high heat. Add steak, and cook 4 minutes per side or until browned.
  3. Transfer skillet to oven, and bake 10 minutes. Let stand 10 minutes before thinly slicing across the grain.

  • 2 (12-oz) pkg green beans
  • ½ cup chopped walnuts
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • ¼ cup crumbled blue cheese

Side Dish Instructions

  1. Cook green beans according to package directions.
  2. Meanwhile, toast nuts in a small dry skillet over medium-low heat 2 to 4 minutes or until lightly browned and fragrant.
  3. Whisk together oil, vinegar, salt, and garlic powder in a large bowl. Add green beans; toss. Sprinkle with nuts and cheese.
