Bacon-Wrapped Pork Loin

Ingredients

  • 2 tsp kosher salt
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • ¼ tsp ground cinnamon
  • ⅛ tsp grated nutmeg
  • ⅛ tsp cayenne pepper
  • 1 Tbsp pure maple syrup
  • 1½ to 2 lb pork loin, trimmed (or use pork tenderloin)
  • ½ lb nitrite-free bacon

Instructions

  1. Stir together first 7 ingredients in a small bowl.
  2. Rub syrup all over pork, and sprinkle with salt mixture. Wrap with bacon, completely covering pork; let stand at room temperature 30 minutes.
  3. Preheat oven to 350°F. Place pork on a rack in a broiler pan rubbed with coconut oil.
  4. Bake 45 minutes to 1 hour or until a meat thermometer inserted into center reads 145°F. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 1 red onion
  • 3 Tbsp coconut oil, melted and divided (or use avocado oil)
  • 1 lb broccoli
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 350°F. Cut onion into 2-inch chunks. Toss with 1 Tbsp oil on a baking sheet. Bake 15 minutes.
  2. Cut broccoli into florets; toss with 2 Tbsp oil, salt, and pepper. Add to baking sheet, and bake 12 to 15 minutes longer.
