Bistro Steak Salad

Ingredients

  • 1 lb top sirloin steak
  • 1 onion, sliced
  • 1 carrot, thinly sliced
  • 1 avocado, diced
  • ½ (12-oz) jar roasted red peppers, drained and sliced
  • 1 (5-oz) pkg mixed baby greens
  • 1 Tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 2 Tbsp extra virgin olive oil

Instructions

  1. Preheat grill to medium-high heat. Grill steak, covered, 10 to 12 minutes or until cooked to desired doneness, turning steak after 8 minutes. Grill onion slices 10 to 12 minutes or until tender, turning several times using tongs.
  2. Let steak stand 10 minutes. Thinly slice steak across the grain; halve onion slices.
  3. Combine steak, onion, carrot, avocado, roasted peppers, and baby greens in a bowl.
  4. Whisk together vinegar, garlic, honey, and mustard; gradually add oil, whisking until blended. Pour over salad; toss.
