One Dish Dinner
Bistro Steak Salad
Ingredients
- 1 lb top sirloin steak
- 1 onion, sliced
- 1 carrot, thinly sliced
- 1 avocado, diced
- ½ (12-oz) jar roasted red peppers, drained and sliced
- 1 (5-oz) pkg mixed baby greens
- 1 Tbsp balsamic vinegar
- 1 clove garlic, minced
- 1 tsp honey
- 1 tsp Dijon mustard
- 2 Tbsp extra virgin olive oil
Instructions
- Preheat grill to medium-high heat. Grill steak, covered, 10 to 12 minutes or until cooked to desired doneness, turning steak after 8 minutes. Grill onion slices 10 to 12 minutes or until tender, turning several times using tongs.
- Let steak stand 10 minutes. Thinly slice steak across the grain; halve onion slices.
- Combine steak, onion, carrot, avocado, roasted peppers, and baby greens in a bowl.
- Whisk together vinegar, garlic, honey, and mustard; gradually add oil, whisking until blended. Pour over salad; toss.
