Barbecue Jackfruit Sandwiches with Tropical Slaw
Corn-Black Bean-Avocado SaladIngredients
- 1 (10.6-oz) pkg refrigerated barbecue jackfruit
- ½ (16-oz) pkg tricolor coleslaw
- 1 small mango, diced
- ½ cup cubed pineapple
- 2 Tbsp vegan mayonnaise
- 1½ tsp fresh lime juice
- ⅛ tsp black pepper
- 1/16 tsp cayenne pepper
- 3 vegan hamburger buns (preferably whole wheat)
Instructions
- Heat jackfruit according to package directions.
- Stir together coleslaw, mango, pineapple, mayonnaise, lime juice, black pepper, and cayenne pepper. Serve jackfruit on buns with slaw.
Side Dish Ingredients
- ½ (12-oz) pkg frozen corn kernels
- 1½ tsp olive oil
- ½ (15-oz) can black beans, drained and rinsed
- 1 avocado, diced
- 2 Tbsp chopped fresh cilantro (or use 1½ tsp dried cilantro)
- 1½ Tbsp fresh lime juice
- 1 clove garlic, minced
Side Dish Instructions
- Cook corn in hot oil in a skillet over medium-high heat 5 minutes or until browned; cool slightly.
- Toss together corn, beans, avocado, and remaining ingredients in a bowl. Chill at least 10 minutes before serving.
