Barbecue Jackfruit Sandwiches with Tropical Slaw

Ingredients

  • 1 (10.6-oz) pkg refrigerated barbecue jackfruit
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 small mango, diced
  • ½ cup cubed pineapple
  • 2 Tbsp vegan mayonnaise
  • 1½ tsp fresh lime juice
  • ⅛ tsp black pepper
  • 1/16 tsp cayenne pepper
  • 3 vegan hamburger buns (preferably whole wheat)

Instructions

  1. Heat jackfruit according to package directions.
  2. Stir together coleslaw, mango, pineapple, mayonnaise, lime juice, black pepper, and cayenne pepper. Serve jackfruit on buns with slaw.

Side Dish Ingredients

  • ½ (12-oz) pkg frozen corn kernels
  • 1½ tsp olive oil
  • ½ (15-oz) can black beans, drained and rinsed
  • 1 avocado, diced
  • 2 Tbsp chopped fresh cilantro (or use 1½ tsp dried cilantro)
  • 1½ Tbsp fresh lime juice
  • 1 clove garlic, minced

Side Dish Instructions

  1. Cook corn in hot oil in a skillet over medium-high heat 5 minutes or until browned; cool slightly.
  2. Toss together corn, beans, avocado, and remaining ingredients in a bowl. Chill at least 10 minutes before serving.
