Basil-Butter Shrimp

Ingredients

  • 3 Tbsp butter
  • 1 lb peeled and deveined, large raw shrimp
  • ¼ cup chopped fresh basil

Instructions

  1. Melt butter in a large skillet over medium-high heat. Add shrimp; cook 2 to 3 minutes or until shrimp turn pink. Stir in basil. Season with salt and pepper to taste.

Side Dish Ingredients

  • 6 oz fettuccine
  • 3 cups baby spinach
  • 2 Tbsp olive oil
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Cook pasta according to package directions. Drain, reserving ¼ cup pasta water.
  2. Toss together hot cooked pasta, spinach, oil, Italian seasoning, and salt in a bowl, adding pasta water, if needed, to reach desired consistency. Toss with cheese.
