Grilled Jerk Chicken Thighs
Creamy Cilantro-Lime SlawIngredients
- 1¼ lb boneless, skinless chicken thighs
- 1½ Tbsp olive oil
- 1 Tbsp Jerk seasoning
- ¼ tsp kosher salt
Instructions
- Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand. Brush with oil, and sprinkle with Jerk seasoning and salt.
- Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; thinly slice.

- 3 Tbsp mayonnaise
- ½ Tbsp lime juice
- 1 Tbsp olive oil
- 1 tsp apple cider vinegar
- ¼ tsp garlic powder
- ⅛ tsp kosher salt
- 3 cups thinly sliced cabbage
- ½ red bell pepper, chopped
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Whisk together mayonnaise, lime juice, oil, vinegar, garlic powder, and salt in a bowl. Add cabbage, red pepper, and cilantro; toss. Chill until ready to serve.
