Grilled Jerk Chicken Thighs

Ingredients

  • 1¼ lb boneless, skinless chicken thighs
  • 1½ Tbsp olive oil
  • 1 Tbsp Jerk seasoning
  • ¼ tsp kosher salt

Instructions

  1. Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand. Brush with oil, and sprinkle with Jerk seasoning and salt.
  2. Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; thinly slice.

Side Dish Ingredients

  • 3 Tbsp mayonnaise
  • ½ Tbsp lime juice
  • 1 Tbsp olive oil 
  • 1 tsp apple cider vinegar
  • ¼ tsp garlic powder
  • ⅛ tsp kosher salt
  • 3 cups thinly sliced cabbage
  • ½ red bell pepper, chopped
  • ¼ cup chopped fresh cilantro

Side Dish Instructions

  1. Whisk together mayonnaise, lime juice, oil, vinegar, garlic powder, and salt in a bowl. Add cabbage, red pepper, and cilantro; toss. Chill until ready to serve.
