Sausage and Cauliflower Gratin

Ingredients

  • ½ large head cauliflower (about 1 lb), trimmed
  • ½ lb Italian sausage links, casings removed
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 cup no-sugar-added pasta sauce
  • 3 Tbsp pitted kalamata olives, coarsely chopped
  • ¾ cup shredded whole-milk mozzarella cheese
  • 2 Tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F. Cut cauliflower into bite-size florets. Place florets in a microwave-safe bowl with 2 Tbsp water. Cook 3 minutes or until just tender; drain.
  2. Sauté sausage and garlic in hot oil in a skillet over medium-high heat 10 minutes or until browned and crumbly. Stir in cauliflower, pasta sauce, and olives. Spoon into a lightly greased 8-inch baking dish. Top with cheese.
  3. Bake 25 minutes. Top with parsley, if desired.

  • ⅛ tsp garlic salt
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook spinach with garlic salt in hot oil in a large skillet over medium heat 4 to 5 minutes or until wilted.
