Sausage and Cauliflower Gratin
Wilted Spinach
Ingredients
- ½ large head cauliflower (about 1 lb), trimmed
- ½ lb Italian sausage links, casings removed
- 3 cloves garlic, minced
- 1 Tbsp olive oil
- 1 cup no-sugar-added pasta sauce
- 3 Tbsp pitted kalamata olives, coarsely chopped
- ¾ cup shredded whole-milk mozzarella cheese
- 2 Tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F. Cut cauliflower into bite-size florets. Place florets in a microwave-safe bowl with 2 Tbsp water. Cook 3 minutes or until just tender; drain.
- Sauté sausage and garlic in hot oil in a skillet over medium-high heat 10 minutes or until browned and crumbly. Stir in cauliflower, pasta sauce, and olives. Spoon into a lightly greased 8-inch baking dish. Top with cheese.
- Bake 25 minutes. Top with parsley, if desired.

- ⅛ tsp garlic salt

- Cook spinach with garlic salt in hot oil in a large skillet over medium heat 4 to 5 minutes or until wilted.
