Apple-Cinnamon Pancakes

- 2 cups all-purpose flour
- 2 tsp baking soda
- 2 tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp salt
- 2 cups buttermilk
- 3 Tbsp honey
- 2 tsp lemon juice
- 2 large eggs
- 1 Tbsp butter, melted
- 2 apples, peeled, cored, and finely chopped
- 1 (8-oz) bottle pancake syrup
Instructions
- Whisk together flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
- Whisk buttermilk, honey, lemon juice, eggs, and butter in a second bowl until blended. Add to flour mixture, whisking until smooth. Stir in apples.
- Spray griddle or large nonstick skillet with cooking spray; heat to medium-high.
- Pour about ¼ cup batter for each pancake onto hot skillet or griddle. Cook until tops are covered with bubbles; turn and cook other side.
- Serve pancakes with syrup.
