Apple-Cinnamon Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • 2 cups buttermilk
  • 3 Tbsp honey
  • 2 tsp lemon juice
  • 2 large eggs
  • 1 Tbsp butter, melted
  • 2 apples, peeled, cored, and finely chopped
  • 1 (8-oz) bottle pancake syrup

Instructions

  1. Whisk together flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
  2. Whisk buttermilk, honey, lemon juice, eggs, and butter in a second bowl until blended. Add to flour mixture, whisking until smooth. Stir in apples.
  3. Spray griddle or large nonstick skillet with cooking spray; heat to medium-high.
  4. Pour about ¼ cup batter for each pancake onto hot skillet or griddle. Cook until tops are covered with bubbles; turn and cook other side.
  5. Serve pancakes with syrup.
