Vegan Chili Verde
Guacamole with Tortilla ChipsIngredients
- 1 red onion, chopped
- 1 large poblano pepper, chopped
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (10.6-oz) pkg chili lime carnitas jackfruit
- 3 zucchini, chopped
- 2 cups frozen yellow corn kernels, thawed
- 2 (15.5-oz) cans cannellini beans, drained and rinsed
- 1 (32-oz) carton vegetable broth
- 1 (16-oz) jar salsa verde
- 1 Tbsp ground cumin
- 1 cup vegan sour cream
Instructions
- Cook onion, poblano pepper, and garlic in hot oil in a large Dutch oven over medium-high heat 5 to 7 minutes until onion is tender. Stir in jackfruit, zucchini, corn, beans, broth, salsa, and cumin.
- Bring to a boil, reduce heat, and simmer 15 minutes. If desired, season with salt and pepper to taste. Serve with sour cream.

- 1 (10-oz) pkg multigrain tortilla chips
