Vegan Chili Verde

Ingredients

  • 1 red onion, chopped
  • 1 large poblano pepper, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 (10.6-oz) pkg chili lime carnitas jackfruit
  • 3 zucchini, chopped
  • 2 cups frozen yellow corn kernels, thawed
  • 2 (15.5-oz) cans cannellini beans, drained and rinsed
  • 1 (32-oz) carton vegetable broth
  • 1 (16-oz) jar salsa verde
  • 1 Tbsp ground cumin
  • 1 cup vegan sour cream

Instructions

  1. Cook onion, poblano pepper, and garlic in hot oil in a large Dutch oven over medium-high heat 5 to 7 minutes until onion is tender. Stir in jackfruit, zucchini, corn, beans, broth, salsa, and cumin.
  2. Bring to a boil, reduce heat, and simmer 15 minutes. If desired, season with salt and pepper to taste. Serve with sour cream.

  • 1 (8-oz) container guacamole
  • 1 (10-oz) pkg multigrain tortilla chips

Side Dish Instructions

  1. Serve guacamole with chips.
