Melon and Marinated Mozzarella Skewers

Ingredients

  • 3 Tbsp olive oil
  • 3 Tbsp chopped fresh basil
  • 2 tsp minced garlic
  • ½ tsp pepper
  • 1 (8-oz) pkg mozzarella pearls
  • 1 small cantaloupe, peeled and seeded
  • 1 pint blackberries
  • Balsamic glaze (optional)

Instructions

  1. Whisk together oil, basil, garlic, and pepper in a resealable plastic bag; add cheese. Seal bag, and refrigerate at least 4 hours or up to 2 days.
  2. Cut cantaloupe into balls using a rounded measuring spoon or a melon baller.
  3. Drain marinade from cheese balls.
  4. Skewer cantaloupe balls, 1 to 2 cheese balls, and blackberries on small wooden skewers. Drizzle with balsamic glaze before serving, if desired.
