Barbecue Chicken Spaghetti

Ingredients

  • 3 lb boneless, skinless chicken breasts
  • 1 sweet onion, chopped
  • 3 cloves garlic, minced
  • 1½ cups ketchup
  • ½ cup apple cider vinegar
  • 2 Tbsp honey
  • 2 Tbsp smoked paprika (or use regular)
  • ¼ tsp cayenne pepper
  • 1 (16-oz) pkg spaghetti

Instructions

  1. Combine all ingredients except spaghetti in a 5- to 7-quart slow cooker.
  2. Cover and cook on LOW 6 to 7 hours or until chicken is done. Shred meat with 2 forks. (Reserve 2 cups shredded chicken for Barbecue Chicken Pizzas recipe.) .
  3. Cook spaghetti according to package directions. Serve remaining chicken and sauce over pasta.

Side Dish Ingredients

  • 1 lb green beans, trimmed
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cloves garlic, sliced

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer.
  2. Bake 12 to 15 minutes, stirring halfway through, until green beans are browned and tender.
