Hawaiian-Style Pork Chops
Edamame Succotash and Cilantro RiceIngredients
- 6 bone-in pork chops
- ½ tsp salt
- ½ tsp pepper
- ½ cup chopped sweet onion
- 1 (15.25-oz) can crushed pineapple
- ⅓ cup ketchup
- 3 Tbsp brown sugar
- 1 Tbsp low-sodium soy sauce
Instructions
- Sprinkle pork with salt and pepper. Place in a lightly greased 5- to 7-quart slow cooker. Top with onion, pineapple, ketchup, sugar, and soy sauce.
- Cover and cook on LOW 8 hours.
Side Dish Ingredients
- 2 cups uncooked long-grain rice
- 1 (14-oz) pkg frozen shelled edamame
- 1 cup frozen corn kernels
- 2 Roma tomatoes, diced
- 2 Tbsp lime zest
- ½ tsp salt
- ¼ cup butter
- 3 Tbsp chopped fresh cilantro
Side Dish Instructions
- Cook rice, edamame, and corn separately according to package directions.
- Toss together edamame, corn, tomatoes, lime zest, and salt in a large bowl.
- Stir butter and cilantro into hot cooked rice, stirring until butter melts.
