Hawaiian-Style Pork Chops

Ingredients

  • 6 bone-in pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup chopped sweet onion
  • 1 (15.25-oz) can crushed pineapple
  • ⅓ cup ketchup
  • 3 Tbsp brown sugar
  • 1 Tbsp low-sodium soy sauce

Instructions

  1. Sprinkle pork with salt and pepper. Place in a lightly greased 5- to 7-quart slow cooker. Top with onion, pineapple, ketchup, sugar, and soy sauce.
  2. Cover and cook on LOW 8 hours.

Side Dish Ingredients

  • 2 cups uncooked long-grain rice
  • 1 (14-oz) pkg frozen shelled edamame
  • 1 cup frozen corn kernels
  • 2 Roma tomatoes, diced
  • 2 Tbsp lime zest
  • ½ tsp salt
  • ¼ cup butter
  • 3 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook rice, edamame, and corn separately according to package directions.
  2. Toss together edamame, corn, tomatoes, lime zest, and salt in a large bowl.
  3. Stir butter and cilantro into hot cooked rice, stirring until butter melts.
